  1. Peel and finely dice the scallions . Wash. core and dice the tomato.
  2. Place the spinach in a mesh strainer. Press or squeeze to remove the liquid.
  3. Shred or cut the cheese into smaller pieces to make melting easier.
  4. Using a double boiler, heat the Half & Half. Add the cheese and stir constantly as the cheese melts. When the cheese is completely melted, remove the mixture from the heat, Fold in the scallions , tomato and the spinach. Stir to combine. Alternatively this can be done with a microwave, melt the cheese then add the other ingredients.
