  1. Make ready 250 g chicken
  2. Get 2 Tbsp vegetable Oil
  3. Take 1 Tbsp Light Soy Sauce
  4. Take 1/2 Tsp salt

  6. Take 1/2 Tbsp Curry Power
  7. Prepare 1/2 Tsp Cumin Seeds

  10. Take 1.5 Tbsp Sugar
  11. Make ready Peanut sauce
  12. Take 200 ml Coconut Milk
  13. Get 1.5 Tbsp Red Curry Paste
  14. Take 1/4 Tsp Cumin Seeds
  15. Get 1/4 Tsp Coriander seeds
  16. Prepare 50-100 ml Chicken Stock or water
  17. Prepare 1 Tbsp Tamarind paste
  18. Take 2 Tbsp Palm Sugar
  19. Take 2 Tbsp Crushed peanuts
  20. Prepare Garnish with coriander & chilli

There are many versions of satay recipes from Asia, but let me assure you that the best satay in the world comes from Malaysia, my home country. Called "Satay Ayam" in Malaysian language, any real foodies who have been to the entire Southeast Asia region will agree they are the best! When ready to cook the satays, stir chicken in its marinade and then thread each slice onto a skewer, working the skewer in and out of the meat, down the middle of the slice, so that it stays in place during grilling. To make the peanut sauce, whisk together peanut butter, soy sauce, lime juice, brown sugar, chili garlic sauce and ginger in a small bowl.

Instructions to make Chicken Satay:
  1. Soak satay sticks in cold water. Leave them aside.
  2. Roast coriander and coming seeds gently, then crushed them to fine powder.
  3. Cut chicken breasts into pieces (7.5 cm x 4 cm x 0.5 cm)
  4. Marinate chicken by putting & mixing all marinade ingredients in the bowl with chicken. Cover with cling film and put int he fridge.
  5. After 40 minutes, Thread chicken onto chicken satay sticks. Then grill them for a couple of minutes per side on the griddle pan. Grill until they are cooked. Or you can grill them in your grill oven for 4 minutes per side and keep flipping them around until they are cooked.
  6. To make peanut sauce, pound peanuts. Leave them on the side.
  7. With medium high heat, heat up half of coconut milk.
  8. Add red curry paste and 1 Tsp of crush cumin seeds & coriander seeds. Move them around gently in the pan.
  9. Add the rest of coconut milk, Palm sugar, salt and Tamarind paste.
  10. Add crushed peanuts move them around.Then add a little stock or water.
  11. Taste it and add more ingredients, if need to. Then turn of the heat.
  12. Garnish with Coriander.

Strips of chicken or beef are marinated in a special Thai paste—unless you go with the vegetarian version —then skewered and grilled or broiled in the oven.
