  1. Combine all the ingredients for the sauce and let sit in the refrigerator for at least an hour.
  2. Season chicken with taco seasoning on both sides and pan fry in olive oil until cooked through. Remove from heat and chop into smaller pieces.
  3. Preheat a large nonstick skillet over medium heat.

  7. Fold the quesadilla over in 1/2 and pat down with a spatula.
  8. Flip quesadilla over once to ensure both sides get crisped up.
  9. Cook until the cheese is melted. Cut into 4 pieces and enjoy.
