- Make ready 1/2 green capsicum, diced

- Prepare 1/2 bunch coriander, chopped
- Prepare 1 grated cheese as needed

Instructions to make Heidi's Quesadillas:
- Drizzle some olive oil in a frying pan and cook onion and capsicum until softened
- Add the creamed cheese and melt down and then add chicken, sour cream, salsa and coriander until warmed through
- Place a tortilla on a plate and top half with chicken mixture, topping with a small handful of cheese
- Fold tortilla over and place in sandwich press (don't push down the lid too hard or the mixture will spill out). Once it's slightly crispy and browned, lift off and slice into thirds
- Repeat until you have as much as needed. Serve and enjoy. I serve this with Mexican rice and a side of marinated chilli mix found in the deli at Coles
