- Now take a pan or kadhai.Heat 2 tbsp oil.Add chopped onion and cook for 2 mins.
- Now add the dry spices.red chilli powder,haldi powder,coriander powder,garam masala powder,hing.mix everything and cook for few seconds.
- Add chopped tomato,green chilli and ginger garlic paste.
- Sprinkle salt and cook till tomatoes becomes mushy or till oil seperates.
- Add the roasted and peeled baingan to the tarka.
- Cover and Cook for couple of minutes.srinkle some coriander leaves.
