- Prepare big brinjals

Made with roasted eggplant, onion and tomato, and flavoured with garlic and green chillies, this dish is a great accompaniment to rotis and Bhakri. I am particularly fond of Vangyachi Bharit because it is spicy. Brinjal bharta Goan style is a healthy recipe as hardly any oil is used. Oil is only used to apply to brinjal while roasting.
Steps to make Vanga bharit (Baingan bharta):
- Roast the brinjals till they are mushy and start leaving their own oil.
- Let cool the brinjals separately.
- Meanwhile cut onion and spring onion. Mash some garlic.
- Add oil in kadai. Add mustard seeds to crackle. Add garlic, onion and spring onion one by one. Add salt, turmeric powder, hing, red chilli powder and garam masala powder into it.
- Remove the cover of the brinjals and mash them properly. Add it into the kadai.
- Cover and let it cook for 2-3 minutes.
- Garnish with chopped spring onion. Vanga bharit is ready. It is best served with bhakri or chapati.
After roasting the brinjal, we mash the eggplant and mix all the ingredients. This Goan smoked eggplant mash recipe is slightly different from Punjabi style baingan bharta. Step by Step Directions to make khandeshi style Vangyache bharith. Mash the roasted eggplant when it is hot don't allow it to cool its difficult to mash it if its cool down. This mashing procedure usually done in badgi (wooden mortar and pestle ). u can use potato masher for this purpose.
