- Roast it on open flame until it start to shrink and tender. Switch off the gas. Let it cool down completely.
- Remove the skin and mashed it well. Heat the oil in the pan. Add mustard seeds, cumin seeds, asafoetida, chopped green chilli and sauté.
- Then add ginger garlic paste sauté for a minute. Add spring onion cook for 2 minutes. Instead of spring onion you can add finely chopped medium size onion. Then add finely chopped methi leaves sauté for a minute.
- Then add tomato paste stir it well. Add red chilli powder, coriander seed powder and cumin seed powder and cook till the oil is separating from it.
- Now add sweet corn or green peas and cook for a minute. Finally add mashed brinjal and salt. Mix well. Cook and stir continuously for 5 to 6 minutes.
- Switch off the gas. Garnish Baingan Bharta with finely chopped coriander leaves and serve with chapati or jawar roti.
