  30. Prepare 1 carrot finely chopped

  35. Prepare 1 big bowl Mozerella cheese

Place equal amounts of cheese and vegetables on each fortilla; fold in half and continue to cook until cheese is melted and tortilla is crisp and lightly browned. I modified her quesadilla recipe just a tad. I mixed her spice rub with olive oil and used it as more of a chile sauce to brush onto the eggplant after I grilled it. I served the remaining sauce on the side of the finished quesadillas… Jack gave this meal two speechless thumbs up.

  1. For dough- Mix the flours, salt, baking powder,sugar, water & oil to make a dough. Roll out the dough into 7 inch rotis & cook on the tawa from both the sides, Cover it with a kitchen towel and let it rest.
  2. For the Mexican sauce- Heat oil in pan, Add cumin seeds, green chillies, garlic, onion (chopped), mixed herbs, oregano and saute till brownish red.
  3. Then add sugar, salt and tomato ketchup, bring to a boil, and transfer it to bowl, let it cool down.
  4. For Aloo Stuffing- Put oil into pan and add onions saute till the onions get tender.
  5. Allow it to cool down, now take peeled/ boiled potatoes in a mixing bowl and mash them, add chopped onions, Schezwan sauce, salt, lemon juice, Chopped coriander, chilli flakes (optional)
  6. For Vegetable stuffing- Take a heated pan, add 2 tbsp oil add onions, saute for 1 min till it become tender, add carrots and saute it.
  7. Now add chopped bell peppers,carrots, boiled corns and salt, pepper and saute in a high flame and transfer it to cool down for few minutes.
  8. Now add grated mozerella cheese in the vegetables and mix them well.
  9. For the quasadillas-Take the tortilla(roti) and spread Mexican sauce over it.
  10. Add a small portion of cheese over the sauce.
  11. In one half of the tortilla, put all the veggies.
  12. Add chilli flakes over the top. Now put the remaining amount of cheese.
  13. Fold the other half tortilla over this. Brush oil & cook on a tawa.
  14. Cut into 3 pieces and enjoy with the salsa dip, or cheese dip ❤️
