The ingredients needed to make Goma-Ae:
  1. Make ready 8 oz dashi
  2. Take 4 oz ground sesame
  3. Get 1 oz miso
  4. Get 1/2 oz maple syrup
  5. Prepare 1/2 oz sesame oil
  6. Make ready 1/4 oz soy sauce
  7. Prepare 1-2 lb vegetables

The most popular goma-ae variety is made with spinach that is topped with sesame seeds and miso paste. In Japanese, "goma" means sesame seed and "ae" means sauce. This cold, flavorful side dish would make an oishii (delicious) addition to a spring picnic. Goma-ae (sometimes written as gomae, but I prefer the hyphenated spelling as it emphasizes the correct pronunciation) is a simple side made with lightly-cooked green vegetables and a sesame.

Instructions to make Goma-Ae:
  1. Mix all ingredients except the vegetables together. Dashi means stock. We use kelp stock. You can use instant dashi powder and water.
  2. Cut the vegetables into the sizes you like. And cook them: Drop the vegetable into boiling water for 30-40 seconds if it's green vegetable like spinach or kale, or longer until it gets soft if it's root vegetables.
  3. Strain the water carefully and drop the vegetable into cold water. Squeeze the extra water.
  4. Put the sauce on.
  5. We have used spinach, chard, kale, cirantro, celery, summer squash, green onion, beet tops, carrots and potatoes, broccoli, cauliflower…etc…etc. Works with most of the vegetable. The one on the picture has some fried sweet potato on it. Enjoy!!

I am in love with the sesame dressing! And it's interesting that this dish is named after this dressing. One of my readers pointed out that the word "Goma" essentially means sesame seeds and "Ae". Goma-ae (胡麻和え), sometimes also spelled Gomaae or Gomae is a Japanese side dish. It is made with vegetables and sesame dressing (goma meaning sesame and ae meaning sauce in Japanese).
