Instructions to make Hara Lehsan and Baingan ka Bharta:
  1. Hara Lehsan - Take 500 gm bajray ka aata, add some salt in it. knead the dough and make 4 to 5 rotis out of it.
  2. When the rotis cool down, grind it.. now clean and finely chop 300gm green lehsan.. put grinded rotis in a bowl.. make a hole in the centre, add lehsan in it sprinkle some salt and pour hot oil or ghee over it.. cover for 2 minutes.
  3. Mix it and prepare Baingan ka Bharta.
  4. Baingan ka bharta - - Take a big, round baingan, rub some oil over it and keep it directly on stove on medium heat.
  5. Keep turning it in between. Insert a knife in it if cooked put it in a bowl with some water.
  6. When it cool down remove the skin and mash it. Add yoghurt and some salt in it.
