  2. Stir flour into beef and butter until beef is coated. Cook 2 minutes more, stirring constantly.
  3. Break out your wisk. Slowly pour milk into sauce pan wisking constantly. Continue wisking to eliminate any clumps of flour.
  4. Bring to a boil still wisking constantly. Reduce heat to medium low and simmer until nice and thick stirring frequently. About 5-10 minutes more.
  5. Stir in pepper and 1/2 tsp salt. Taste and add additional salt if desired (I usually end up with about 3/4 tsp in mine).
  6. Serve over toast. Enjoy! Goes great with fried eggs!

Chop your chipped beef roughly and set it aside. If you are sensitive to salt, rinse the beef. Melt butter in a small saucepan over medium heat. Whisk in the flour and cook the roux for a minute. Whisk in the milk gradually and season with ground nutmeg, ground onion powder, ground garlic powder, a few.
