Makes for a delicious, warm soup. Try garnishing with cheese and/or a little sour cream. Based on how easy the recipe was the soup turned out surprisingly nice. It wasn't the best chicken soup I ever had but I suppose that type of soup takes hours of slaving away in the kitchen.
Instructions to make Refreshing chicken Soup!:
- Bring medium pot to a boil. Add ginger, lemongrass (chopped into thirds), onion, and garlic.
- While pot is boiling, remove skin from chicken thighs and thickly chop. Cut as much meat from the bone of each thigh piece. Also thickly cut chicken liver in large chunks or keep whole. (Optional: cut chicken hearts in half but i usually keep them whole.) Add everything to pot including bones.
- While stirring, add msg and powdered chicken boullion. Let simmer for 10 mins. Then add lime leaves.
- Cut scallions into thirds and add to pot. Also add fish sauce to taste. Simmer for about 15 mins and add straw mushrooms on top. Enjoy!
I also used fresh chopped celery instead of celery salt and a boullion cube base. In a large saucepan, bring broth and onion to a boil. Remove chicken from pot, and let stand until cool enough to handle. Skim fat from surface of soup, if desired, and discard. Remove and discard parsley stems and bouquet garni.
