The ingredients needed to make Gizdodo:
  1. Make ready 500 g Chicken Gizzards
  2. Take 5 firmly ripe plantain
  3. Get 4 big carrots
  4. Prepare 3-5 fresh tomatoes
  5. Prepare 7 fresh pepper (scotch bonnet)
  6. Prepare 3 Red Bell peppers
  7. Get 5 Red chili peppers
  8. Make ready 3 medium sized green pepper
  9. Get 10 Green beans
  10. Prepare 1 handful green peas(optional)
  11. Prepare 2 seasoning cubes
  12. Get 1 bulb red onion
  13. Prepare 1 tsp curry powder
  14. Take 1 tbsp Ginger and garlic powder
  15. Get 3 cups Vegetable oil
  16. Get Salt (to taste)

Gizdodo - Aromatic Stewed chicken gizzard and plantains infused with herbs, bell-peppers -easily replace with chicken thighs. Growing up in Africa, we ate every part of the chicken except the bones. Gizdodo is an increasingly popular dish in Nigerian homes and parties. If you haven't cottoned on to the Gizdodo buzz or are yet to try it out, then you really are missing out!

Steps to make Gizdodo:
  1. Wash, season and cook Gizzards for 20 minutes in little water till done, allow cool, then dice into sizeable chunks (leave the meat stock for use)
  2. Peel plantains & dice too, then fry in the some vegetable oil till a little golden brown, remove from the oil and set aside
  3. Fry the Gizzards a little, then set aside.
  4. Chop up the tomatoes, carrots, green pepper, green beans and & Bell pepper (tatashe, remove the seeds it gives off a bitter taste in Sauces) and set aside
  5. Blend the remaining peppers; red chilli & scotch bonnet to be a little coarse (not smooth) with half the red onion, chop the remaining half separately for use
  6. Now all your ingredients are ready for the sauce
  7. Heat up 180mls of vegetable oil in a saucepan over medium heat and stir fry the onions, blended peppers and chopped tomatoes to dry up a little
  8. Add in the chopped vegetables etc and stir fry for another 1 minute
  9. Add in the Dodo(fried plantain) & fried Gizzards and mix all thoroughly. Allow simmer again for 1 minute, then add in the meat stock(about a cup), 1 seasoning cube, curry, ginger and garlic powder and finally mix all the ingredients together
  10. ☝️Don't forget to taste for salt before adding any more salt or seasoning. Remove from heat and allow to cool
  11. Serve warm as a lone meal or with boiled white rice, Yam or pasta 👌
