- Make ready haggis
- Get 1 tbsp oil
- Get 250 grams bacon or pancetta
- Prepare 250 grams mushrooms sliced
- Make ready 454 grams haggis
- Get 150 ml chicken stock
- Prepare 500 grams shortcrust pastry
- Prepare 1 beaten egg or milk to glaze
- Take 1 onion finely chopped

- heat oil in a large frying pan, add the onion & bacon and cook for 6-8 mins until golden
- add the mushrooms and cook for a further 2-3 mins
- remove the haggis from the casing, slice and stir into the bacon mixture with the stock and whiskey
- cook for 2-3 mins and allow to cool
- preheat oven to 200c gas mark 6
- cut the pastry in half and roll out 1 portion on a lightly floured surface and use to line a round pie tin or plate approx. 23cm dia.
- spoon the cooled haggis mixture into the centre
- roll out the remaining pastry and use to top the pie, moistening the edges to ensure a complete seal
- use pastry trimmings to decorate pie
- brush with egg or milk to glaze and bake in the oven for approx. 35mins until golden
- delicious served with mashed potatoes and swede - neeps n tatties or other mashed vegetables such as carrot or celeriac
