- Preheat oven to 400°F
- Bake 20-30 mins
- Let stand
Mix quinoa, sauce and half of the cheese in the pan with the black bean / veggie mixture. Top with diced tomatoes and green onions. Share In a separate bowl, beat the eggs lightly and fold into the quinoa, black bean, and vegetable mixture. Transfer to an oven-safe baking dish, add cheese on top. Then stir in some black beans, corn, enchilada sauce, your cooked quinoa, and a bit of cheese.
