- Put in Cuisinart, this recipe is worked in half. There's not enough room to put everything in at once so i put half of everything in and then the other half. - Start with three potatoes and half an onion
- Add one spoon salt
- Add half a spoon of pepper
- Add 1/2 cup oil
- Add 3 eggs
- Before blending ingredients, add 1 tbs oil in a baking pan. Warm up oven to 450° and stick pan in
- While oil is heating up in the oven, process ingredients together. - Oil should sizzle as you pour the first batch of potato mixture in the pan
- Now add the rest of the ingredients to the blender: potatoes, onion, salt, pepper, oil and eggs. - Process and pour in the pan
- Bake at 450° for 1/2 hour. (Our batter made so much so i added some batter to a silicone cup cake sheet after spraying pam on it)
- Then lower to 350° for another 1/2 hour
- And enjoy! - My niece loved the cupcakes and they came out of the pan like a charm
