The next day boil the chole in enough water in a pressure cooker with cloves, cinnamon, black cardamom, green cardamom, bay leaves, black salt and tea bag/bags. Amritsari Pindi chole is a full-flavoured preparation of chickpeas (chole). Pindi chole is spicy and tangy, with flavours of garlic, whole spices, pomegranate seeds, fried green chillies. Amritsari chole can be served with kulcha, bhatura, paratha and rice.

Instructions to make Pinndi Cholle:
  1. In a pressure cooker add the overnight soaked white chana with one bay leaf,cinnamon,salt and 2 tea bags.cover and cook until they are completely done.
  2. Now make mixture of all the dry spices.sprinkle the dry masala over the cooked chana.
  3. Now take 3 tbsp ghee and let it become quite hot over the flame.Add this hot ghee over the cooked chana and spices mixture.keep this aside.
  4. Take a pan or kadhai add 2 tbsp oil.now add cumin seeds,onion,hing,ginger garlic paste and cook till onion becomes little brown.
  5. After onions have become brown add curd.stir and cook completely.
  6. Add tomato paste and cook till oil starts separating.
  7. Add water and cook till it boils.
  8. Add the cooked chana.Cover and cook it on slow flame till it becomes thick.check the seasoning.Now add chopped coriander leaves and some chopped green chilli.
  9. Pindi channa is ready.serve it hot with roti,naan,poori or rice.

Amritsari chole makes a good option for Saturday dinner or Sunday lunch. Tie tea leaves in muslin cloth to form a bundle. Drain the chickpeas and transfer into a pressure cooker.
