Raw Mango Sambar Recipe is a delicious Tamil Nadu Style Sambar where dal is cooked with raw mango and other South Indian spices. Whole spices like mustard seeds, dry red chilli, hing, urad dal are also poured over the dal as a tempering that helps to add more flavours. The dal has a right balance of sourness from the raw mango and sweetness from the jaggery that is being used in curry.

The ingredients needed to make Mango sambar:
  1. Prepare 2 tbsp Oil
  2. Take 1 tsp Mustard seeds
  3. Get 1 tsp Fenugreek seeds
  4. Make ready 1 tsp Urad dal
  5. Get Curry leaves 1 sprig
  6. Make ready garlic cloves 5 nos
  7. Make ready 1 tsp Hing powder
  8. Get Red chilli 2 nos

  13. Prepare 1 cups Toor dal
  14. Get Tamarind juice- small lemon size 1 nos
  15. Take 1 tsp Turmeric powder
  16. Make ready 1 tsp Chilli powder
  17. Get 1 tbsp Sambar powder

So they pass it whenever possible. Raw Mango sambar i have tasted in my friend's house few years back, but somehow i didn't liked it. But i don't say she didn't make it nice, because mango sambar one of her signature dish. Somehow i don't like the tanginess of mango in sambar.

Steps to make Mango sambar:
  1. Wash toor dal and cook well in a pressure cooker along with 2 garlic, turmeric powder, green chilli, Hing powder and salt for 2 whistles.
  2. Soak a lemon sized tamarind in a water for 15 mins and take the juice.
  3. In a pan add oil, when it is hot add red chilli, mustard seeds, fenugreek seeds, urad dal,remaining garlic,Hing powder and Curry leaves. When spluttering add onions and tomato, mix it well and cook till it becomes mushy.
  4. Now add turmeric powder, chilli powder and sambar powder. Mix well till the raw smell goes.
  5. Add the cubed mango pieces and mix well to the masala.
  6. Now mash the cooked dal and add to the onion tomato masala.
  7. Keep the flame in medium low and cover it for 5 mins, mix it in between to avoid burning.
  8. Now extract the juice from the tamarind that is soaked in water and add to the dal. Add more water to this if you according to your consistency and let it boil for 15 mins in medium low.
  9. Now switch off and have the tasty mango sambar with hot steamed rice.
