  1. Fry anchovies and set aside
  2. Using same oil, fry onions and garlic until fragrant
  3. Add in garlic and ginger paste and sauté
  4. Add chilli paste and fry until no more chilli smell and oil separates
  5. Add crushed fried anchovies and mix
  6. Add in water and tomatoes
  7. Mix until fragrant and add in ikan bilis

Add ikan bilis and big onions and stir-fry well. Mix in lime juice, water and seasoning ingredients. Dish out and serve with nasi lemak. This ikan bilis sambal is best served with all the traditional fixings of nasi lemak - freshly cooked coconut rice, a fried or boiled egg, sliced cucumbers and fried peanuts and anchovies. p.s. this is what ikan bilis looks like after it's properly peeled and prepped.
