Cut up all the ingredients into chunks apart from the tomatoes put in a bowl with a few glugs of oil the juice of the lemon and a good. These halloumi kebabs are one of our favourite meals and even though they are quite summery we eat them all year round. I'm a big fan of halloumi (despite the fact that it's often badly behaved and tends to split when you're trying to skewer it!) and this is a great way to eat it.   1. Make up the kebabs using pepper, courgette, halloumi and cherry tomatoes and drizzle a little oil
  2. Heat chickpeas in a little oil for 5 mins with the tumeric then remove from heat and mash adding in coriander and seasoning
  3. Grill kebabs for 10 mins and serve with chickpeas and a drizzle of pesto

Drain off water and pat it dry using kitchen paper. Slice into bite-sized cubes and put into a mixing bowl. Halve and de-seed the peppers and cut into bite-sized pieces. Peel the onions and cut each one into six wedges. Add the vegetables to the bowl with the harissa paste and garlic.
