Heat the remaining oil in a pan and sweat the onion for a few minutes until soft. Add the beetroot and the stock and bring to the boil. Season lightly with salt and freshly ground black pepper. Stir in the tomato purée, transfer the soup to a blender and process until completely smooth.

Instructions to make Beetroot Soup:
  1. Heat butter in a deep non-stick pan.Add chopped onion & garlic to the pan & saute.
  2. Then add thinly sliced carrot & potato.Add salt,black pepper powder & stir.Cover & cook forn2-3 mints.
  3. Add beetroot & 3 cups water.Cover & cook till the vegetables are almost done.
  4. Add chopped tomato.Strain the vegetables.Allow to cool.Blend into a smooth puree adding a little.cold water.
  5. Transfer the puree back into the pan, add the strained cooking liquid & mix well.
  6. Heat the soupThen pour it into a soup bowl,garnish with cream & serve hot.

After eating, the empty bowl remains, similar to mushroom stew. This smooth and velvety beetroot soup is absolutely delicious. I love the vibrant colour that the soup takes on and it's wonderfully contrasted both in colour and flavour by the fresh sprigs of dill garnish.
