- Roast oats for 2 to 3 minutes in a pan. Let it cool. In a grinder grind the oats into fine powder. Remove in bowl and add 12 cup of water and keep aside.
- In a pressure cooker heat one tablespoon olive oil or ghee. Sauté onion, cloves and pepper until the onion is pink.
- Now add vegetables and 3 cups of water and lock the the pressure cooker and cook for about 5 to 6 whistles. Turn the gas off and let it cool before opening the pressure. Once its cool blend it in a blender adding the oats. Stain the soup and let it simmer on medium heat for 5 to 6 minutes. Add salt and pepper to your taste.
Carrot Beetroot Soup is another easy, healthy and quick soup that I make and the fact that it looks more like tomato soup (thanks to beets) is just wonderful.
