Combine the heavy cream, butter, brown sugar, corn syrup and salt in a saucepan. Bring to a simmer over medium heat, whisking. Add the chocolate and cocoa powder, reduce the heat to low and cook. Start by setting a heavy-bottom saucepan over low heat.
Instructions to make Hot Fudge Sauce:
- Place both chopped chocolates in a heat proof bowl, set aside
- Place cream and butter in a saucepan and heat over medium low heat until butter is melted and mixture is almost to a simmer, do not boil.
- Pour hot cream / butter mixture over chopped chocolate in the bowl. Let sit 30 seconds to melt chocolate. Add the vanilla and whisk until smooth.
- Serve hot over ice cream, cakes pies or fruit. Store in refrigerator. To reheat take the amount you want out and either place in a heatproof bowl in simmering water until hot or very carefully microwave until hot. Keeps about 2 weeks in refrigerator and freezes well.
The heavy bottom will keep you from scorching the chocolate, which can burn easily. Ideally, the chocolate chips should be unsweetened so you can control the sweetness, but dark or semisweet chocolate will work in a pinch. Use a spatula to stir the butter and chocolate.
