Quarter potatoes and steam or boil them.Strain,cool and mash them.Heat 1 tbsp oil and sprinkle hing/asafoetida.Add finely chopped onion.Fry golden brown and add chopped green chillies.Then add the mashed potato alongwith red chilli powder,roasted jeera powder,ginger paste,salt and sugar to taste and garam masala. Toss all till well browned.Add chopped coriander and toss.Set aside to cool.

Mix 1 tbsp oil,little salt,ajwain in maida(all purpose flour), atta(whole wheat flour).Make a well in the middle and add water and knead into a stiff dough.Add little oil and knead again.Keep covered for sometime.Then make into round balls.Shape into cups and stuff some potato stuffing in it.Close the cups and roll the parathas with little oil.Heat a nonstick pan and fry the parathas drizzling oil.Serve hot with mixed pickle,sauce and some salad. A blob of butter may be added but optional.
