  2. Slowly add beaten eggs and mix very well, then add in the diced carrot and mashed banana.
  3. Add the flour and baking powder into the bowl, and mix roughly. A powdery texture is okay.
  4. Spread olive oil or margarine on the inside of a cup cake pan then pour in the mixture to half way up each cup cake form (avoid over filling). Bake for 20 minutes and remove to a cooling rack.
  5. Note: if the banana used is green and still hard, heat in a microwave for 30 sec to soften.
