- Add the egg mixture to the mushrooms and mix softly. Close the lid of the pan and let it cook for another 4-5 minutes in medium heat.
- Add the mayo and mix well , Add the salt to taste…. This dish goes well with buttered bread or with rice.
If serving a larger crowd, you can easily double the recipe. Peel hard-boiled eggs, cut in half lengthwise and remove yolks to a bowl. Mash yolks with a fork then mash in mayo, pickle juice, mustard, and seasonings. Beat eggs, milk, parsley, and salt in a cup. Transfer to the bowl with the mushrooms.
