  2. In a medium size skillet over medium heat, melt the butter and sauté the onion, bell pepper, and jalapeno until the onions are translucent. Set aside to cool.
  3. Mix together the cornbread mix, eggs, corn, and creamed corn in a large bowl.
  4. Stir in the chopped crawfish tails and cheddar cheese. Mix well to combine.
  5. Stir in the sauteed vegetables and stir to combine.
  6. Spread the cornbread out in a greased 9x13 baking dish and bake in the oven for 45-55 minutes.
  7. Allow to cool for 10-15 minutes

Stir together cornmeal, baking soda, and salt in a large bowl. In another bowl, beat together the eggs, onion, green pepper, pimentos, vegetable oil, Cheddar cheese, cream-style corn, jalapeno pepper, crawfish tails, seasoned salt, cayenne pepper, and garlic powder until the mixture is well combined. Season the crawfish with the cayenne pepper, garlic powder and Tony Chachere's Creole Seasoning (or seasoned salt). Mix all the ingredients except the cornbread in a large bowl.
