  1. Prepare 1 Cup chole (chickpeas) (over night soaked in warm water)

  3. Make ready 1 large onion
  4. Prepare 2 small potatoes (peeled & chopped)
  5. Get 1/4 tsp backing soda (optional)
  6. Get 4 black pepper corn
  7. Take 2 tea bags (if you don't have tea bags then put 2 tsp tea in a handkerchief & tightly tie it)
  8. Make ready 3 cloves
  9. Prepare Pinch hing
  10. Take 1 inch long cinnamon
  11. Prepare 1 bay leaf
  12. Take 2 tbsp oil
  13. Take 2 cup water
  14. Take 3 tomatoes
  15. Take 4 black pepper corn
  16. Prepare 3 green or red chilli
  17. Take 3 cloves
  18. Take 1 inch long ginger
  19. Get 1/2 tsp turmeric powder
  20. Make ready 2 tea bags (if you don't have tea bags then put 2 tsp tea in a handkerchief & tightly tie it)
  21. Make ready 1 &1/2 tsp red chilli powder
  22. Take 1 tsp coriander powder
  23. Get 2 cup water
  24. Get 1 tsp lemon juice
  25. Take salt for taste
  26. Get 1/4 cup Coriander leaves for garnishing (due to lock down I don't have coriander in my kitchen pantry so I didn't use.)

Making chole masala is very easy if you have chole masala powder handy. You can make your own chole masla powder and store it for quiet sometime. If there is no homemade chole masala powder, you can use a good store bought one. To get a slight dark colored chole, usually tea bags or dried amla is added while cooking chickpeas.

Steps to make Chole without chole masala powder:
  1. In a pressure cooker add chickpeas, potatoes, salt, bay leaf, black pepper corn, cinnamon stick, tea bag & 2 cup water. Pressure cook it for 3 whistles. (If needed you can add 1/4 tsp backing soda to cook it properly. But it's totally optional
  2. In a mixy jar add green chilies, garlic, ginger, chopped tomatoes & chopped onion and make a smooth paste out of it.
  3. In a big pan add oil, hing & add paste to it. Cook it till oil separates from sides. In between stir it.
  4. Add Turmeric powder, red chilli powder & coriander powder to gravy.
  5. Mix everything well.
  6. Close lead & cook it for approx 10 mins on a low flame. If needed add little water.
  7. Add lemon juice at last & mix everything properly.
  8. Meanwhile your cooker release it's heat & chole is perfectly cooked. Mashed potatoes finely. Remove tea bag from cooker & transfer remaining everything to gravy.
  9. Garnish it with Coriander & serve hot with Puri, Paratha, Kulcha, Naan or Bhatura.
  10. Transfer water also to it (don't throw away because it contains high nutritious value to it.)
