Instructions to make Chole bhature:
- Soak the kabuli chana for 5-6 hrs. Take a cooker, add the chana and a potli comprised of tea powder, cloves, pepper corn, cinnamon stick and bay leaf and then pressure cooker for 5 whistles.
- Now to prepare the chole, take all the dry spices (powder), add little water and make a paste. Keep it aside.
- Now take onions, green chillies, garlic, ginger and make a fine paste.
- Heat oil in a kadai, add the grounded paste. Allow it to cook well. Add the spices paste, mix well. Cover and cook the masala till the oil leaves the sides of the kadai.
- Now add the chole, mix well, add curd, cream, ghee and salt. Mix again. Cover and cook on high flame and then make the gas on slow. Let it boil and all masala mix with the chole. Now remove from gas and serve it in a plate, garnish it with ginger juliennes, coriander leaf and onions(not in pic). Enjoy❤ it with hot hot bhature.
