Indori Poha (Poha of Indore) is a type of flattened (beaten) rice (version of Maharashtrian Poha) that is likely to have originated in Indian metropolis of Indore. It contains cooked Poha (flattened rice) and is usually served with a unique combination of Jalebi (called Poha-Jalebi combined), Sev, Usal. Just as the combination of Indori poha with jalebi is a popular street food in Indore. In the same way Fafda and jalebi combo is popular in Gujarat.
Steps to make Poha jalebi:
- Mix all-purpose flour, cornstarch and curd together
- Add baking powder
- Use water to make a flowing paste
- Keep the paste covered for 10 minutes
- Fill in the squeeze bottle and fry jalebis in hot oil
- Prepare sugar syrup of one string consistency
- Dip jalebis in syrup on both sides and jalebis are ready
- For poha soak it in water for some time
- Heat oil crackle mustard seeds,curry leaves,green chilli
- Add chopped onion and potato
- Saute it add turmeric powder,red chilli powder,add roasted peanuts
- Transfer the soaked poha
- Mix it nicely
- Add lemon juice
- Serve it by adding chopped onions coriander leaves
