Punjabi Chole Masala or Chana Masala is an Indian favorite chickpea curry. When using store-brought chole masala, to get an authentic taste always buy "Chole Masala" and not chana masala. - In a pan, add the oil and butter together. Then put the mustard and cumin seed. Let it crackle. Now add the cloves and black cardamon. When it starts leaving aroma, add in the chopped onion. Sauté it until it turns golden brown. Add in the ginger-garlic paste and curry leaves. Put the chopped tomatoes to the mix and keep sautéing.
- Now to the mixture, add in all the spices and sauté for 2-3 mins. Add the cooked chickpeas to the mixture along with the water. Add in some more water is required. Close the lid and let it cook for 10-12 mins on low flame. Garnish it with coriander leaves and serve it hot with Indian bread/ Rice.
