Tomato rice can be served with out any sides as it is very flavorful & tasty. Add rice and stir to coat. The tomato rice is slightly spicy. To reduce the spiciness, just use less amounts of ginger-garlic paste, black pepper and red chilli powder.
Instructions to make Tomato rice.:
- At first, put basmati rice after wash in a pan for 30 mints
- Then cook rice. Add 1 tea spoon ghee and salt as per taste while cooking rice.
- Cut the tomatoes and add 2 pinch of coriander leaves in it and get it in mixer or blender to make well crushed.
- Then, put a pan on gas on medium flame and add any edible oil in it about 2 table spoon full.
- After getting oil hot, add mustard seeds and cumin seeds in oil.
- Then add tejpatta, daalchini, cloves in oil.
- Add ginger and garlic paste in oil. Make it slightly brown.
- Add chopped onion n make it to slightly brown.
- Add biryani masala or garam masala in oil.
- Add tomatoes puree in pan.
- Add turmeric powder, sugar,salt in it.
- Add slight pepper powder in it.
- If you want more spicy, you can add half tea spoon full of red chillies powder in it too.
- Mix it well. And put a lid on the pan on low flame for 5 minutes.
- Open lid and mix it again. Put the lid again for 2-3 minutes untill quite oil gets separated from tomatoes mixture.
- Then open lid and add the cooked rice in it. Mix it well.
- Add cut coriander leaves in it and mix well.
- Put the lid on low flame for 5 minutes.
- Again mix it well.
You can have the tomato rice plain with some papads or chips or serve it with onion tomato raita or boondi raita. This thakkali sadam also goes well in the tiffin box.
