- In mixing bowl, combine tomatoes, chiles, 3/4 of enchilada sauce, and meat.
- Cover bottom of 9-inch pie dish with enchilada sauce, place tortilla on top.
- Spoon sauce and meat mixture over tortilla, then sprinkle shredded cheese on top.
- Repeat layers until pie dish is nearly full.
- After your final layer, place one tortilla on top, then spread the rest of your enchilada sauce on it.
- Bake for 30 minutes. I sprinkle more cheese on for the last 10 minutes.
- Dinner is served!
