The ingredients needed to make Imrati/Jangiri:
  1. Prepare 3/4 th cup Urad Dal
  2. Take 1.5 cup Sugar
  3. Get as required Water
  4. Get 1 tbsp Lemon Extract
  5. Prepare few drops Orange Colour
  6. Prepare as required Oil / Ghee for shallow fry

Instructions to make Imrati/Jangiri:
  1. Soak the urad dal for 2 hours or overnight. Grind into a smooth paste without adding much water. Beat it vigorously to make it fluffy and light. Add a few drops of red colour and beat again.
  2. Now take a zip lock bag or any plastic bag and fill the batter into it.
  3. Now heat a saucepan and the sugar and 1/4 cup water. Let it boil until sugar dissolves. Switch off just before you reach the one string consistency. Add the lemon juice. It's important to add lemon extract, otherwise your sugar syrup will get crystalized. So do not skip.
  4. Now heat a wide pan with oil for shallow fry. Keep the flame on low. Now give a small cut in the corner of the filled come and start pressing it and make two circles first and then try to make flower shapes.
  5. Cook both sides for 2-3 minutes and immerse directly into the sugar syrup. Let it soak in the syrup for few minutes. Take out and serve. If you feel raw smell of urad dal, allow it to sit aside for more time as the sugar syrup needs to get inside.
