There is a big difference from your mainstream grocery store generic and a good old can of Aroy-D coconut milk for some reason. Most traditional versions of adobo don't use coconut milk.

- Fry potato and bellpepper.
- Saute garlic and onion. If done let the chicken feel the heat.
- If you think your chicken is ready for a milk bath feel free to put your coconut milk and bay leaves let it boil for 4 mins.
- Then add vinegar. Let the vinegar cook then add salt and pepper to taste.
- If done put it in your preferred container and add your fried potato and red bell pepper.
- Syazzzam.
This chicken adobo with coconut milk dish is similar to my mom's white chicken adobo. However, it is different in the sense that coconut milk is added at the final stage of cooking. The coconut milk adds texture and flavor to this dish resulting in a creamier and tastier chicken adobo. Most Adobo are tangy and garlicky but this version is slightly sweet by using an pineapple tidbits addition.
