- Prepare tomatoes (cut into pieces)
- Get spring onion (for garnish)

- Get 8 shallots
- Prepare 4 garlics
- Take 4 cm fresh turmeric (i used turmeric powder as i dont have the fresh one at home, but my soup looks a bit pale)
- Make ready 4 cm fresh ginger
- Prepare 3 pcs candle nuts
- Get 1 tsp corriander seeds
- Make ready Additional spices: (no need to put in blender)
- Prepare 2 pcs bay leaves
- Take 5 pcs lime leaves
- Make ready 4 stalks lemongrass (smashed)
When the chicken is cold, shred the chicken meat into small pieces as one of the dishes' condiments. The unique flavor of soto ayam mostly comes from the spice mix. - Add salt, pepper, chicken seasoning to taste.
- To serve: - In a bowl, arrange the glass noddle, cabbage, bean sprout, chopped tomatoes, boiled egg, shredded chicken meat, spring onion, fried shallots, and pour the soup over it. - We like to add: black sweet soya sauce, lime and chilli :) - - Enjoy!
