Bruschetta is an appetizer that does frequent rounds at parties hosted by me. It is essentially toasted baguette with olive oil, cherry tomatoes, cheese and basil. Very often, I give it my own personal twist; like vegetables with mushroom being the favorite. The true flavor of the bruschetta is on the "sauce" that forms from the tomatoes'juices, olive oil, and seasonings marinating together.

Instructions to make Dhokla Bruschetta:
  1. Clean and chop all vegetables finely.
  2. Take all chopped vegetables in one bowl, then add herbs, black pepper, olive oil, cheese and mix well. Keep it in the refrigerator for few hours so all the flavours of herbs are infused in the vegetables. Add salt at the time of consuming.
  3. Now make dhokla of your desired shape in a steamer.
  4. Once it cools down, unmould it.
  5. Shallow fry it from both the sides.
  6. Now spread prepared filling on the shallow fried dhokla. Sprinkle grated cheese and chilli flakes and serve.

To keep the bread from getting soggy, make sure it is well toasted, and use a slotted spoon to serve, if desired. Make marinated tomatoes: In a medium skillet over medium-low heat, heat oil. Rubbing the garlic directly on the bread may make it strong – but it IS the authentic method – it's how they did it while I was in Italy. One good suggestion is to drizzle olive oil over the top of the tomatoes. FRESH basil is NECESSARY for this.
