The ingredients needed to make Spaghetti Carbonara:
  1. Make ready 200-250 g spaghetti
  2. Get Salt
  3. Prepare 1 tbsp olive oil
  4. Prepare 2 onions, chopped
  5. Get 180 g bacon medallions/rashers, chopped. I prefer unsmoked but smoked is fine if preferred
  6. Get 2 eggs
  7. Get 5 tbsp half-fat crème fraîche
  8. Get 20 g Parmesan cheese

Pour the egg mixture over the pasta. Toss rapidly to coat the pasta without cooking the egg. Remove the pan from the heat and add a big handful of cheese, lots of pepper and a little salt. Garnish with parsley and extra grated Romano.

Instructions to make Spaghetti Carbonara:
  1. Bring salted water to boil ready for the spaghetti. Time cooking to reach al dente and be drained ready for Step 5. Fresh spaghetti will take 3 minutes, dried spaghetti about 8-10 minutes but follow the packet’s instructions. Please note that the pasta must be immediately added to the onions and bacon and not allowed to cool. This is to ensure that the eggs, which are added immediately after the spaghetti, are cooked properly.
  2. Beat the eggs, add the Parmesan cheese and crème fraîche and beat with a fork until well-mixed and forming a creamy sauce. Do this before starting the pasta if using fresh spaghetti.
  3. Gently fry the onions and bacon in the oil until soft (about 6 or 7 minutes). Stir gently if needed to avoid sticking.
  4. Take out and reserve a cup of the pasta water, then drain the spaghetti in a colander.
  5. Add the spaghetti to the onions and bacon, then immediately add the egg sauce. Stir thoroughly to ensure that the egg mixture gets cooked along with the rest. If the sauce is quite dry and needs loosening, stir in a small amount of the pasta water. Once the egg is cooked, serve immediately. Sprinkle additional Parmesan cheese on top of the served portions if wished.

Arrange in reserved skillet and drizzle with a little oil. Set over medium heat and cook, stirring occasionally, until lightly golden brown and starting to. In a small bowl, whisk together eggs and Parmesan; set aside. I have had Spaghetti Carbonara hundreds of times and this, by farn n n n n n was the worst tasting. No one at the dinner table liked it.
