- Take 1 lb Ground turkey
- Get 1/2 onion, chopped
- Prepare 1 chopped bell pepper

- Make ready 1 packages corn tortillas
- Make ready 1 Salsa verde
- Get 1 crema
- Take 1 cup or as much as you'd like- shredded cheese
- Prepare chopped cilantro
- Prepare oil for frying
- Make ready lime
Heat the oil in a frying pan over med-high. Melt the butter in a saucepan over medium heat. Stir in the flour and chicken broth. Pour remaining enchilada sauce over top; sprinkle with remaining cheese.
Steps to make Turkey enchiladas suiza:
- Preheat oven to 350°
- Heat oil in frying pan on stove.
- Heat another pan and add onions and bell pepper. Cook until soft and add the ground turkey.
- When oil in other pan is hot, add tortillas, one or two at a time, until lightly golden yet still pliable. Flip once and remove. Set aside until you have as many tortillas as you need.
- When the turkey is cooked through, add the taco seasoning and follow packet directions accordingly. Add minced garlic and green chiles at this point if desired. I also squeezed a lime into the meat mixture. (Optional )
- Remove excess oil (if any) in the first pan and add a bit of salsa verde. Turn down burner, you just want it slightly heated.
- Add 1/2 cup or so of salsa verde to bottom of casserole or baking dish and spread it to cover the bottom. (I always spray my dishes with cooking spray before adding enchilada sauce).
- Take one tortilla and lay it in salsa verde in the pan, flipping over as well, to coat it. Then add a spoonful or two of the meat mixture to your tortilla and give it a roll. Place seam side down in prepared casserole or baking dish. Repeat until you have the desired amount of enchiladas.
- Spread remainder of the salsa verde on top of the rolled enchiladas.
- Drizzle crema over enchiladas. Then sprinkle as much cheese and cilantro on top of that as you'd like.
- Bake in preheated oven for a half hour or until heated through.

Spread out some salsa in bottom of baking dish. Enchiladas Suizas are a chicken and cheese enchilada served with a green sauce. This is my conversion into a casserole dish that my kid wolfed down. Its not spicy, easy casserole, great for potlucks. You can make it vegetarian by removing the turkey.
