My friend mentioned that usually appam is paired with a spicy curry like chicken curry, egg curry or kadalai curry. Stew is more a Christian influence from the Portuguese. The Syrian Christians make excellent chicken stew, mixed vegetable stew which is called Ishtew. In this recipe of chicken stew with appam, chicken is tossed with a fried mix of onions, red chilli, green chilli, ginger-garlic paste.

Instructions to make Appam and stew:
  1. Grind the overnight soaked rice with poha.grind one cup fresh coconut along with this.Tip in salt and sugar half spoon each with soda and keep in a warm place for fermentation.you can add yeast one tsp if it’s cold climate.Gives 100 % positive results.
  2. Make appam in a tawa or pan by taking one spoon thin runny batter and swirl the hot pan to spread the batter.The appam is thick at the centre and thin peripherally.cover with lid and let it cook for few min.
  3. For the stew cut all veggies. I have taken onion and slit green chilies that’s necessary other veggies are potato carrot beans cauliflower and sweet corn kernels.
  4. Now boil it in the thin coconut milk with salt.I have made coconut milk at home by grinding fresh coconut with warm water and filtering it.Repeat the process three times. Last time you get the thin milk.store bought milk is the thicker one so you add some water in two Tbsp milk to make thin milk and boil vegetables in this milk.
  5. After vegetables are cooked add pepper powder boil once now switch off the gas.Add the thick milk and season with tadka coconut oil cardamom pepper corn cinnamon dry red chilli and curry leaves.
  6. It’s ready to serve. Garnish with coriander

It is sautéed with tomatoes, potatoes and coconut milk and simmered for a while. It is finished with the addition of more coconut milk, coriander and lemon juice giving a tarty tinge.
