  1. brown ground meat, 1/2 of chopped onion, 1/2 of cilantro, 1/2 lime juice, salt and pepper
  2. place meat in tortilla shell and sprinkle a little cheese, then wrap and spray light coat of non stick cooking spray, place in a 13in. X 9in. baking pan
  3. repeat step two until all tortilla shells are done
  4. pour half can of tomato sauce, sprinkle cilantro, and onion
  5. bake in oven for 20 minutes
  6. remove from oven and cover with desired amount of cheese
  7. bake for additional 5 minutes or until cheese its melted
  8. remove from oven let stand for 2 minutes and serve

Those parts of the tortillas that weren't covered with cheese turned hard.. While you could certainly make all of the ingredients from scratch, we use packaged Spanish rice and an envelope of taco seasoning as a shortcut. It's ground from lean sirloin, so it won't exude as much fat and grease as it cooks.. I made the homemade sauce too and that was the best sauce ever. This truly was an excellent and easy recipe.
