Instructions to make Enchilladas:
  1. Heat Oven to 350
  2. Brown ground beef and onion chopped together till done.
  3. Spray 9x13 pan with cooking spray
  4. take flour tortilla and spread small amount of refried beans, add ground beef/onion mix and then equal amiunts of cheddar and jack cheese
  5. Roll up with opening at bottom. Repeat till pan is full.
  6. Top all enchillas with Enchilla sauce and cheese

Arrange the enchiladas in a baking dish. You can either place the chicken enchiladas seam-side-up or seam-side-down. Then pour any remaining sauce on top of the enchiladas and sprinkle on some extra cheese. Bake uncovered until the enchiladas are cooked through and the edges of the tortillas get slightly crispy. Using a large shallow bowl, dip each tortilla in enchilada sauce to lightly coat.
