The ingredients needed to make Rice Pancake / Appam:
  1. Get 150 g rice flour
  2. Take 1/2 tsp yeast
  3. Prepare 2 tbsp water
  4. Take 1 tbsp sugar
  5. Prepare 125 ml coconut milk
  6. Take 1/2 tsp salt

Easy, soft and fluffy Appam made with fermented rice and coconut batter. An all time favorite breakfast 🙂 It's best served with chicken stew/mutton stew/vegetable stew or fish molly and a staple diet in a Kerala home. Let the batter rest in a warm area for the batter to rise or refrigerate. One of my favourites, served at breakfast was Appam.

Steps to make Rice Pancake / Appam:
  1. Add in 2 tbsp. lukewarm water to the yeast and sugar in a big bowl. Mix well, set aside for about 10 minutes.
  2. Add in the rice flour, salt and coconut milk, mix well. The batter should be of dropping consistency. Cover it and set aside for about 2-3 hours.
  3. Heat up the mould or an appam pan, grease it lightly with oil.
  4. Pour enough batter into it, slowly rotate the mould or pan in a circular motion so that a thin layer forms on the side while the centre reminds thick. Use a spoon to scoop in the egg, add in 2 spoons of egg mixture in each mould. If you use an appam pan, crack an egg in the centre.
  5. Cover and cook for a minute, remove the appam when the centre fluffy part is cooked. Sprinkle a bit of black pepper on top. Or you can serve it hot with curries.

Appam is a lacy pancake made from rice, rice flour or ground rice, coconut and yeast. Coconut is added either in the form of grated fresh pulp or in the form of coconut milk. Appam or palappam is a soft rice pancake which is enjoyed for breakfast and it is a very popular Kerala breakfast for Christmas, Easter etc, where appam is usually served with egg curry, Kerala egg roast, stew or any curry of your choice.
