- Prepare 5 tbspn veg oil
- Take 3 knoor chicken
- Take 3 pcs scotch bonnets

Steps to make Cous cous jollof:
- Heat oil in a pot.
- Add in onion,chopped scotch bonnets, ginger,tumeric and garlic paste and fry for 3mins.
- Add in 1cup meat stock and one cup of water,maggi,salt to taste, mix spice,beef or chicken breast,bring it to boil.
- Lower the gas and add in the cous cous,stir it and cover it for about 5mins
- Add in your chopped carrot,scallion,green beans and any veggies u like. Cover it and let it steam for about 3mins and enjoy with salad and garnish with slice tomatoes,onions and sprinkle some cabbage
- Enjoy
The amazing thing about couscous is how fast it 'cooks' and how versatile it is. This is one of those recipes that should give you lots of ideas to create your own combinations. By the way, this is the 'home' version; the traditional method used to cook this dish uses a steamer called a kiska, sometimes called a couscoussier in French cuisine. With Couscous i find a lot of people are turned off cooking it because they assume it to be complicated dish but that's far from the truth. Jollof couscous can just be as tasty as your jollof rice with the added value of using a lot less tomato.
