Making soft spongy appam is not an easy job to many. Appam is one of mascots of many cooks to show off their culinary skills especially in Kerala. I just love the way my mom cooks appam. Remove from the kadai and serve hot with kurma or egg curry.

Steps to make Appam and veg kurma:
  1. Soak raw rice and urad dal for 4 hours in water,After that grind soaked raw rice,urad dal,coconut,cooked rice,salt and soda bi carbonate into a fine paste by adding little water,And keep it aside for 8 hrs for fermentation.
  2. For kurma-Cook all the veggies in a pressure cooker two whistle is enough,After that saute onions into a pan by adding little cooking oil (I have used coconut oil)then add ginger garlic paste and saute it when it's raw smell get released put all the dry ingredients in it and saute at last add tomatoes and cook the Masala till the tomatoes get mashed,After that put all the cooked veggies into the Masala and also put thick coconut milk at last and bring it to a light boil.
  3. At last seasoned the curry with mustard seeds,dried red chillies and curry leaves,garnish it with coriander leaves and with lemon juice (optional).Cook appam in a appam pan just put a ladle of the fermented mixture in the pan get it a stir round in the pan and cook it for 3-4 sec,just check it out in between.Now it got ready !

Traditionally back home, appams are served with sweetened thin coconut milk. Note: A typical appam will be crisp and thin on the edges and soft, fluffy and thick at the base, i.e, the center. Vegetable kurma: Ingredients: Beans (chopped) - ΒΌ cup You can also serve with poori or neer dosa or poha dosa or set dosa. Even plain soft dosa goes very well with mix veg kurma. Sometimes I also serve with steamed rice or appam or lachedar paratha or Kerala paratha.
