  1. In a bowl combine maida salt baking powder well,then add ghee and rub between palms till ghee is incorporated well into flour and flour becomes crumbly
  2. Now add yoghurt knead into medium dough if dough is too dry sprinkle little water and mix again do not over mix or over knead the dough as it will remove the flakiness formed due to baking powder ghee and yoghurt
  3. Set dough aside for 15 to 20 minutes meanwhile prepare sugar syrup.
  4. In a vessel add sugar half quantity water cardamon or saffron mix well on medium heat and bring mixture to a boil
  5. Once sugar dissolves and mixture starts boiling simmer gas and cook in low flame for 6 to 8 minutes the syrup shud be thick (2 string consistency)

  7. Off gas set the syrup aside for balushahi scoop out medium dough balls roll between palms gently shape like a round cookie and press with thumb deep into the center to make a hole
  8. It will look like doughnut then fry them in less than medium hot oil they should not come up and float on oil fast but just bubble away slowly
  9. After 10 minutes flip them keep flame low throughout the process cook for 10 minutes on other side too they should looked puffed up and light golden brown from all sides
  10. It takes 20 to 30 minutes for balushahi to cook thoroughly inside out.
  11. Once they are done drop them in warm syrup one by one keep them immersed in syrup for 5 minutes flip after 2 minutes.
  12. Once they become a little soft remove from syrup and set them on a plate garnish with dry fruits
  13. Let them cool well so that the syrup holds onto them they are soft from inside and crunchy from outside
