Instructions to make Sooji Appam:
  1. Soak sooji with buttermilk in a bowl for approx. 20-30 minutes.
  2. In the meantime, finish chopping and getting in place all other ingredients. Mix all of it with the batter. - Note: If any of the above vegetables are not available, then batter can be made with rest of the ingredients.
  3. Take an appam tawa. Put 1-1 drop oil in all the rounds of appam tawa.
  4. Pour 1 spoon full batter in all the rounds and cover tawa with a lid. Keep tawa on medium heat.
  5. When the top colour of appam slightly changes from white to offwhite, flip the appam to cook the other side. It will take approximately 3-4 minutes.
  6. Put drops of oil from sides, so that it's bottom also gets cooked completely. Cover tawa with a lid.
  7. Check appam after 2 minutes.
  8. Appam are ready. Serve with tamarind chutney, coriander chutney or curd. - Note: Instant uttapam also can be prepared witht he same batter.
