It is a spicy lentil based vegetable stew with a subtle sour flavour where mashed dal is cooked with assorted vegetables, sambar powder and tamarind pulp. For all the experts out there, let me tell you this is a post for beginners and for people who haven't even heard of sambar.

  6. Make ready 1 tsp ginger paste
  7. Get 1 tsp fennel seeds paste
  8. Get 1/2 tsp asafoetida
  9. Get 8-10 curry leaves

Add cinnamon and cardamom and saute for a min. Add in ginger and garlic paste and mix well. Vegetable Masala Curry You can use vegetables like Potatoes, Carrots, Beans, Green Peas, Cauliflower, Capsicum and so on for this curry. This curry is healthy as you are not using any cream or coconut milk for the gravy.

Steps to make Mixed Vegetables Masala Appam:
  1. Mix finely chopped vegetables salt, ginger paste, fennel seed paste and asafoetida in the idli batter and mix everything really well.
  2. In a pan, put some oil. Add cumin and curry leaves and once the cumin crackles, pour the oil mix to idli batter and mix again.
  3. Grease the appam maker with little oil. Preheat appam maker. Take mixture in a spoon and fill the moulds with the idli batter.
  4. After filling all the molds, cover and cook for 2 minutes on low flame. When the appam get golden brown from beneath, flip the sides.
  5. Cover again and cook for 2 more minutes. Cook until appam get golden brown in colour at both sides.
  6. Take out the roasted appams in a plate and likewise prepared rest of the appams.
  7. Serve with coconut chutney.

To the grated vegetables add some salt and mix it well (and if necessary add some red chilli powder also) and keep it aside. Tender vegetables like cauliflower, potato and peas are cooked with green chillies and coconut milk. This can be prepared in few minutes and green chilies are enough for the spiciness. The addition of coconut milk adds a creamy texture and rich flavour to the gravy. Coconut milk is the only thickening agent in the curry.
