Steps to make Apricot jam:
- Wash the apricots and put them in a pan, add one glass of water.
- Cook till the apricots are tender. Remove from heat and cool it
- Take another pan or large bowl, sieve the apricots and extract the pulp.
- Add sugar and citric acid and cook till the sauce is thick. Should be one thread consistency.
- Check point is, take water in a glass add a small quantity of jam, if spreads cook little more.
- Store in clean strelized bottle or jar.

I was a bit dissapointed that I only got two jars, but the taste is amazing. This jam is made without pectin and the list of ingredients couldn't be simpler. You will need a very large pot to prepare this in, as the jam boils up double in size.
