Add sausage slices and cook for a few minutes until brown, turning half way through. Add onions and carrots; stir-fry until crisp-tender. Stir in the water, soy sauce and reserved pineapple juice until smooth. Add the sausage, ginger and garlic. Add in the zucchini and bell peppers.
